Chocolate Chip Cookies½ cup butter melted
1 ¼ cup Spelt Flour
¼ cup honey
1 egg
½ tsp vanilla
¼ tsp baking soda
1 cup dark chocolate chips
Beat butter. Add Flour, egg, honey, baking soda and vanilla – mix well.
Stir in chocolate chips. Spoon onto cookie sheet. Bake 8-10 minutes in 375 degree oven.

Chocolate/Carob “Devils Food” Cake1 cup honey
1/2 cup butter (softened)
2 eggs
1 cup buttermilk (or mix yogurt/sour cream & milk)
2 tsp vanilla
2 cup Whole Wheat Pastry or Spelt Flour
2 Tbs nutritional yeast (or 2 extra T. flour)
1 tsp salt
2 tsp baking soda
4 Tbs chocolate or carob powder (unsweetented)
1 cup hot water
In a Large Bowl, cream together honey and butter. Beat in egg, buttermilk and vanilla.
In a medium bowl, sift together dry ingredients and add to honey mixture alternately with hot water. Mix until smooth. Pour into greased and floured 9x13 glass pan and bake at 350 degrees for 30-40 minutes. Check after 25 minutes. Remove when toothpick inserted into middle comes out dry.
Optional: Cover and refrigerate.
This recipe is great for birthday cakes. Delicious served with whipped cream.

Cheesecake24 oz Cheese (cream cheese, ricotta, cottage cheese)
4 eggs
¼ cup honey
¼ cup lemon juice
2 Tbs cornstarch
1 Tbs vanilla extract
Put all ingredients into food processor or large bowl. Mix until smooth. Pour into a 10” pan with graham cracker crust. Bake at 350 degrees for 45-60 minutes-until the top puffs lightly all the way to the center.
Optional: fruit topping (heat berries of choice with cornstarch on stove until thickens)

Crunchy Granola6 cups rolled oats
2 cups coconut (unsweetened)
1 cup raw sunflower seeds
½ cup pecans or hazelnuts chopped
¾ cup sesame seeds
1 ½ cups raisins (or other dried fruit)
¾ cup honey (or maple syrup)
¾ cup oil (melted coconut oil)
1 tsp vanilla
Preheat oven to 275 degrees
Combine dry ingredients – mix well.
Add wet ingredients- mix again.
Spread onto large baking pan with short edges.
Bake 25-40 minutes depending on preference.
If baking full 40 minutes, stir midway.
